The biggest difficulty in selling hand-drip coffee is that the extraction quality varies depending on each employee preparing the coffee, and it takes a long time to train on drip coffee.
In addition, there is the difficulty of finding skilled workers, and the manual dripping process takes a lot of time, so it is difficult to do other work at the same time, and thus labor costs are high. When dripping coffee manually, it is difficult for the worker to precisely control the temperature.
Also, during the dripping process, the hot water in the kettle gradually cools over time. Therefore, at the end of the extraction, there is a temperature drop of about 5 to 15 degrees compared to the beginning of the extraction.
Current automatic dripping machines are available with a single kettle, and all batches are prepared at the same temperature. In addition, because the extraction temperature for each extraction step is always constant, the extraction is carried out at a constant temperature from the beginning to the end of the extraction. This causes a difference between hand dripping and flavor.
