The following qualifications are required: Qualifications: - Bachelor's degree in Agriculture, Animal Production, Food Sciences, or a related field. - Preferably, have courses or additional qualifications in Food Safety and HACCP. Experience: - At least 5 years of practical experience in poultry slaughterhouses or poultry processing plants. - Experience in supervising slaughter, processing, packaging, and cooling lines. - Knowledge of operational stages: receiving, hanging, slaughtering, defeathering, evisceration, washing, cooling, cutting, and packaging. Food Safety and Quality: - Strong understanding of HACCP, GMP, and SSOP. - Ability to monitor cooling and freezing temperatures and the cold chain. - Knowledge of microbial contamination risks, especially Salmonella, Campylobacter, and E. coli. - Ability to develop corrective actions for non-compliance or non-conforming lab results. Supervision and Operations: - Managing labor, assigning tasks, and monitoring adherence to operational procedures. - Monitoring line productivity and waste and loss rates. - Monitoring hygiene and sanitation before, during, and after operations. - Following up on equipment maintenance in coordination with the maintenance team. - Preparing daily reports on production, quality, and violations. Very Important Requirements: - Knowledge of Saudi regulations and requirements related to slaughterhouses and food safety. - Ability to deal with regulatory and inspection bodies. - Proficiency in using Excel and preparing reports. - Ability to work in a cold, humid operational environment for long hours. - A strong and decisive leadership personality, as the job involves direct supervision of labor and production.
